Oatmeal Muffins
My mom used to make these when I was growing up. I love that the smell of them makes my house seem so warm and loved. My kids absolutely love these! I like to make them with whole wheat flour instead of all purpose, but they are great both ways. And they are so quick and easy to throw together, I just love them!
Oatmeal Muffins
1 cup oats
1 cup buttermilk
Mix these together and then add:
1/2 cup oil
1/2 cup brown sugar
1 egg
mix again and then add:
1 cup flour or whole wheat flour
1/2 t baking soda
1/2 t salt
1 t baking powder
mix until combined. Pour into greased or lined muffin tin. Bake at 375 for 15 minutes or until golden brown. Makes 12 muffins

ReplyDeleteHi I made these muffins this past weekend, however, the recipe has "baking soda" listed twice, for two different amounts. I changed the "1 tsp. baking soda" for "1/2 tsp. baking powder" and they were delicious.

ReplyDeleteI LOVE THIS RECIPE!! It has become a favorite at our house and I thought I would share a couple of alternative I use.
ReplyDeleteI sub 1/2 the oil with applesauce. I grind the oatmeal a bit because my family doesn't care for the texture of the oatmeal. I add 1 Tb ground flax seed and 1 Tb wheat germ. I use 1/2 whole wheat and 1/2 regular flour.
In the fall I might use chunky applesauce and add some cinnamon and nutmeg...
BUT thanks for the amazing recipe - I love your site!!
These were good but not quite what I expected. For some reason I thought they would be sweeter. They were good though!
