Grandma Twinkle's Zucchini Bread

This bread takes me back to my childhood every time I bite into a piece. My Grandma Twinkle used to make it for us and then my mom, now it is my turn. I love recipes that get passed down from one generation to the next. There is something so fulfilling for me to make something that has been made for years.

Grandma Twinkle's Zucchini Bread

3 eggs
1 cup oil
2 cups sugar
3 t vanilla
2 cups zucchini, grated
3 cups flour
1 t salt
1 t baking soda
1/4 t baking powder
3 t cinnamon

Beat together eggs, oil, sugar and vanilla. Add zucchini then dry ingredients. Mix well. Divide into 2 greased, loaf pans. Bake at 325 for 1 hour.

    Ok, answers... My grandma's last name was actually Morningstar, but that was too hard to say when I was really little so she started saying Twinkle because that is what stars do. I get my cinnamon sticks at any grocery store in the baking isle by the spices. I have used both protein drink mix and protein powder that you get at a health food or Whole foods store, both work great. The protein drink mix makes it a little sweeter. Lastly, I have an A-mazing pizza dough recipe...my husband is a homemade pizza GENIUS! I will be posting it sometime in the near future so stay tuned for that. I hope these answers help!
