Peanut Butter, Peanut Butter Chocolate Chip Cookies

I have been meaning to blog about these for weeks now! I am a sucker for Peanut Butter Chocolate Chip cookies! I just can't seem to get enough of them! I grabbed this recipe off of My Kitchen Cafe and got straight to work. Heaven! Pure heaven!

Peanut Butter Chocolate Chip Cookies
(makes 4-5 dozen)

1 cup butter, softened
2 cups peanut butter
1 1/2 cups brown sugar, firmly packed
1 cup sugar
2 eggs
1 1/2 T milk
1 1/2 t vanilla
2 1/2 cups flour
1 1/2 t baking soda
1 t baking powder
1/2 t salt
2 cups chocolate chips (I used 1/2 milk chocolate and 1/2 peanut butter chips)

Preheat oven to 350

In a large bowl combine butter and peanut butter and beat until it is light and fluffy.  Add the brown sugar and white sugar and mix until combined.  Add the eggs and mix for 1-2 minutes, until the mixture is well combined and light in color.  Add the milk and vanilla and mix again.  Add the dry ingredients and mix briefly.  While there are still large spots of flour, add the chocolate chips and then continue mixing until the flour is all mixed in. Let the cookie dough sit for 15 minutes before scooping onto cookie sheets.  It will firm up as it sits.

When ready to bake, scoop the dough onto cookie sheets lined with parchment paper.  Leave 1-2 inches between cookies to allow spreading.  Bake for 10-11 minutes, making sure to not over bake in the slightest.  Leave the cookies on the sheet for 2-3 minutes before removing to a cooling rack.  The cookies will look lightly undercooked but they will firm up as they cool.  (My cookies didn't flatten out very much so I had to flatten them with the back of a spoon as soon as they came out). Cool completely.

These are Super good frozen too!

Peanut Butter Banana Blender Drink

This has been a breakfast that has been in my life since I can remember. I loved it (and still do) and now my kids love it. It brings back memories, it's healthy, and can pack some protein. So what are you waiting for, make this for breakfast!

Peanut Butter Banana Blender Drink
(about 2 servings)

1 ripe banana
1 spoonful of peanut butter
1 cup of milk
1/4 t vanilla
protein powder (optional, but so good)
ice

Put all the ingredients into a blender and blend until smooth. These measurements are just a guess, I alter the amounts to taste. So, if you LOVE peanut butter, add more. If you like it thick add more ice. You get the point!

Monster Cookies

These cookies are from The Pioneer Woman. They have SOOOO much in them and they are SOOOOO good! Now, I am a succor for cookies, almost any kind, but these are one of my favorites. There are so many flavors happening and they are so rich. Need, I say more? Do you need more convincing? I could go on and on! But instead, just go make some yourself! I used these cookies as an excuse to photograph my cute new cookie plate and adorable Fall apron my mom gave me! She is the BEST!

Monster Cookies

2 sticks butter, softened
1/2 cup sugar
1 1/2 cups brown sugar (I used dark)
2 eggs
1 T vanilla (yes, Tablespoon)
1 1/2 cups flour (I added a little more, about 1/8 to 1/4 cup)
1/2 t baking soda
1 t baking powder
1/2 t salt
1 1/2 cups oats (I used quick)
1/2 cup mini M&M's
1/2 cup chopped pecans
3/4 cup chocolate chips
1/2 cup peanut butter chips
2 1/4 cups rice krispies

Preheat oven to 375. Cream together the butter and sugars. Add the eggs one at a time. Add vanilla. Add flour, baking soda, baking powder, and salt and mix well. After that, add the rest of the ingredients leaving the rice krispies until the very end. Mix until just combined, do not over mix.

Scoop onto a cookie sheet and bake until golden brown, about8-10 minutes. Cool on a rack.

Peanut Butter Chocolate Chip Cookies

I told you I have been on a cookie spree lately! The sad thing is I am only posting the ones I TOOK pictures of! There have been others that were devoured too quickly to photograph. Anyway, I came across these irresistible cookies at Annie's Eats. I altered the recipe a bit and added milk chocolate chips to go along with my craving. So I will post how I made them, they were to die for! They are SO chewy and soft! I cooked all of them and then froze little bags with about 6 cookies in each thinking that that would keep me from eating them all at once. It did spread out the eating fest for a couple of days... I know, I was shocked when I went to the freezer and there were NO cookies! My actual first thought was "Who took My cookies?!"

Peanut Butter Chocolate Chip Cookies

3 cups flour
1 cup sugar
1 1/2 t baking soda
1 t baking powder
1/4 t salt
1/4 cup shortening
1/4 cup butter, softened
1 cup creamy peanut butter
1 cup honey (yes, really ONE cup)
2 eggs
sugar, for rolling (I omitted this and added chocolate chips)
2 cups chocolate chips (I used milk chocolate)

Preheat oven to 350. Cream together shortening, butter, peanut butter and honey.  Mix in eggs one at a time.  Add the dry ingredients and mix until just combined.  Add chocolate chips or roll into balls and roll in sugar.  Put balls on ungreased cookie sheet and bake at 350 for about 10 minutes or until golden  brown on the edges.

Peanut Butter Balls

This one is for the kidos! My son LOVES these and loves to help make them. They are so easy and I love having a bag of them in my freezer for a healthy, protein packed, treat. Another great recipe that I grew up on, oh the memories...

Peanut Butter Balls

1 cup graham cracker crumbs
1 cup powdered milk
1 cup peanut butter
honey to taste and consistency

Mix everything together, add enough honey until they are as sweet as you want, and the dough holds together. Roll them into balls and freeze.

Peanut Butter Fudge Cake

I got this recipe from The Sister's Cafe, yet another favorite food blog. This cake is so good! Moist dense cake, creamy peanut butter and a heavenly fudge frosting...who could resist?!

Peanut Butter Fudge Cake

2 cups flour
1 tsp baking soda
2 cups sugar
1 cup butter
1/4 cup cocoa (I use dutch )
1 cup water
1/2 cup buttermilk
2 large eggs, lightly beaten
1 tsp vanilla extract
1 1/2 cups creamy peanut butter
chocolate frosting

Combine first 3 ingredients in large bowl and set aside. Melt butter in a saucepan over medium heat, stir in cocoa. Add water, buttermilk, add eggs, stirring well. Cook stirring well until mixture boils. Remove from heat, add to flour mixture and stir until smooth. Stir in vanilla. Pour batter into a greased and floured 9x13 pan. Bake at 350 for 20-25 minutes or until a wooden pick inserted in center comes out clean. Cool in pan on a wire rack for 10 minutes. Carefully spread peanut butter ( I heated it in the microwave for a minute to soften it) over warm cake. Cool completely. Spread with chocolate frosting. Cut into squares. 20-25 servings.

Chocolate Frosting

1 (16oz) package powdered sugar
1/4 cup cocoa (I use dutch)
1/2 cup butter
1/3 cup buttermilk
1 tsp vanilla extract

Bring cocoa, butter and buttermilk to a boil in a small saucapn over medium heat, stirring constantly. Pour hot mixture into a bowl with the sugar, stirring until smooth. stir in vanilla.
