Banana Chocolate Chip Muffins
Banana Chocolate Chip Muffins
(12 muffins)
1/2 cup butter, room temperature
2/3 cup sugar
1 cup mashed, ripe bananas (I used 2 medium)
1 egg
1 t vanilla
1/4 t coconut flavor (optional, but so good)
1/3 c milk
1 1/2 t baking powder
1/2 t baking soda
1/2 t salt
2 cups flour (you can use half white and half whole wheat)
3/4 cup chocolate chips (optional)
3/4 cup cinnamon chips (optional)
Preheat oven to 350. Lightly grease a muffin pan.
In a medium bowl, beat together the butter and sugar until creamy. Beat in the banana, egg, vanilla, coconut flavor, and milk. Add the baking powder, baking soda, salt and flour and stir until smooth. Add the chips (if using) and then divide evenly into the prepared muffin pan. Bake the muffins at 350 for 20-25 minutes until a toothpick inserted in the middle comes out clean.

Perfect Guacamole
Storing left over Guacamole is tricky, we have found the best way is to press plastic wrap to the top of the leftovers in a bowl removing all the air bubbles. Like when you press plastic wrap onto the top of pudding to prevent a film from forming.

Chicken Taquitos
1/2 can black beans, rinsed and drained (optional)**
**We made these again and added one can of black beans and a can of corn (both drained), omitted the cheese, left the chicken the same and doubled the cream cheese and spices and it made twice as many taquitos! We didn't miss the cheese at all and LOVED the corn and beans in them!

Our Favorite Smoothie
This is just a list of ingredients. I just start putting these things into my blender and taste/adjust amounts as I go. I do always put the same things in though. After trying so many different combinations of things, this is our favorite. My kids love it and I love that they love it! This makes for a happy family! And who doesn't want that?! We do smoothies for breakfast all the time, but they are great whenever and can even be frozen into popsicles.

Chewy Soft Pretzels
Makes 8 pretzels
Dough:
2 1/2 cups all-purpose flour
1/2 teaspoon salt
1 teaspoon sugar
2 1/4 teaspoons instant yeast
7/8 to 1 cup warm water
Topping:
1/2 cup warm water
2 tablespoons baking soda
Coarse salt (optional)
3 tablespoons butter, melted
Place all of the dough ingredients into a bowl and beat until well combined. Knead the dough, by hand or machine, for about 5 minutes, until it is soft, smooth, and quite slack. Lightly flour the dough and place it in a plastic bag; close the bag, leaving room for the dough to expand, and let it rest for 30 minutes.
Preheat your oven to 500°F. Grease 2 cookie sheets, or line with parchment paper.
Transfer the dough to a lightly greased work surface, and divide it into eight equal pieces. Allow the pieces to rest, uncovered, for 5 minutes. While the dough is resting, combine the 1/2 cup warm water and the baking soda, and place it in a shallow bowl or pie plate. Make sure the baking soda is thoroughly dissolved; if it isn’t, it will make your pretzels splotchy.
Roll each piece of dough into a long, thin rope (about 28 to 30 inches long), and twist each rope into a pretzel. Dip each pretzel in the baking soda wash (this will give the pretzels a nice, golden-brown color), and place them on the baking sheets. Sprinkle them lightly with coarse, kosher, or pretzel salt. Allow them to rest, uncovered, for 10 minutes.
Bake the pretzels for 8 to 9 minutes, or until they’re golden brown.
Remove the pretzels from the oven, and brush them thoroughly with the melted butter. Keep brushing the butter on until you’ve used it all up; it may seem like a lot, but that’s what gives these pretzels their A-mazing taste. Eat the pretzels warm.

Blueberry Muffins
Summer means blueberries in Michigan and although I don't totally love the little things alone, blueberry muffins are heaven! This is a great recipe too! I found it at Allrecipes.com but of course altered it a little.
Blueberries Muffins
3 cups flour
1 1/2 cups sugar
1 t salt
4 t baking powder
3/4 cup oil
2 eggs
2 t vanilla
3/4 cup milk
3 cups fresh blueberries
Crumb Topping
1 cup sugar
2/3 cup flour
1/2 cup butter, cut into chunks
3 t cinnamon
*mix all together with a fork or pastry cutter until crumbly
Preheat oven to 400. mix dry ingredients, then add the wet. Fold in blueberries last. Grease or line muffin pan. Fill the cups right to the top and generously sprinkle with crumb topping. Bake for about 20-25 minutes. This makes 24 muffins.

Peanut Butter Balls
This one is for the kidos! My son LOVES these and loves to help make them. They are so easy and I love having a bag of them in my freezer for a healthy, protein packed, treat. Another great recipe that I grew up on, oh the memories...
Peanut Butter Balls
1 cup graham cracker crumbs
1 cup powdered milk
1 cup peanut butter
honey to taste and consistency
Mix everything together, add enough honey until they are as sweet as you want, and the dough holds together. Roll them into balls and freeze.

Granola
Granola
6 cups oates
¾ cup wheat germ
½ cup brown sugar
2/3 cup oil
1 T cinnamon
2/3 cup honey
2 t vanilla
2 T water
½ cup dry milk
1 cup coconut
1 cup slivered almonds
1/2 t salt
Mix all ingredients together. Spread on large, lightly greased cookie sheet, press down if you like chunky granola and bake at 300’ for 25 minutes. Let cool and mix in any dried fruit, if desired. This is enough to put on two large cookie sheets, I usually half this.
